Creamy Vegan Alfredo
This creamy vegan Alfredo is a great ‘replacement’ to the real thing.
I hadn’t had Alfredo in about 8 months — it was one of my favourite dishes! Often when people speak of wanting to switch to a vegan or plant based diet they bring up the foods they would miss. I try to not see it as a loss but rather as a gain. I’m actively saving animals lives, saving the planet and feeding my body the most nutrient dense food I possibly can (most of the time –if you haven’t tried a gourmet vegan donut then you’re missing out 🍩)
But, if I had to choose a certain meal that I missed, it would have to be my mom’s homemade fettuccine Alfredo. I have always been in awe of how she could find leftover ingredients and create a delicious meal. I always wanted to be that confident in the kitchen to be able to just follow my intuition like she does (I think I’m getting close 🤞🏻).
My mom is a woman who isn’t afraid to use a lot of garlic when cooking. Something she passed on to me which became an important aspect to this oh so creamy vegan Alfredo sauce.
